Coffee Made With A Turkish Ibrik
One of the original brew methods for coffee is the Turkish Ibrik.
This method is the traditional Middle Eastern style of brewing coffee. Turkish Ibriks are usually made from either brass or copper. You can also find modern versions which are made from stainless steel.
Brewing with an ibrik:
When preparing to use an ibrik, just remember that the proportions are quite simple, you just add one of everything per cup. For the instructions below we are using a 3-cup ibrik.
The grind of your coffee will need to be very, very fine – almost powdery.
- Add 3 very heaped teaspoons of Turkish ground coffee into the ibrik.
- Add 3 heaped teaspoons of sugar to the ibrik.
- Measure your 3 cups of water using the coffee cups you will serve the coffee with.
- At this point, you can experiment by adding cardamom pods or a stick of aniseed/cinnamon
- Add the ibrik over low heat and wait for it to boil.
- As soon as the brew threatens to boil over, remove it from the heat, stir and re-add to the heat.
- It will quickly boil again and instantly remove from the heat. Don’t bother to re-stir.
- Reboil a third time for a more rounded flavour, and remove from the heat
- Alternate pouring between the cups, ensuring each gets a share of the all-important froth.
- Enjoy!
